Mama's Gingerbread

Ingredients:

3 cups all-purpose flour
2 tsp. baking soda
2 tsp. each -- ground ginger, ground cinnamon, ground allspice
1/2 tsp. each -- ground cloves, ground nutmeg
1/2 cup all-vegetable shortening
1 cup sugar
2 eggs
1 cup molasses
1 cup buttermilk
Whipped Cream (optional)

Directions
1.  Preheat oven to 350 degrees.  Spray 13x9x2-inch pan with no-stick cooking spray and set aside.
2.  Stir together flour, soda, ginger, cinnamon, allspice, cloves and nutmeg.  Set flour mixture aside.
3.  In large mixing bowl beat shortening and sugar with electric mixer on medium speed until combined.  Add eggs and molasses.  Beat until combined.
4.  Alternately add flour mixture and buttermilk to beaten mixture, beating on low speed after each addition until combined.  Spread batter in prepared pan.
5.  Bake for 30-35 minutes or until wooden toothpick inserted near center comes out clean.  Cool slightly on wire rack.  Serve warm with whipped cream.
