Impossible Coconut Pie

1 stick butter (softened)
2 cups milk
2 teaspoons vanilla extract
1 cup sugar
4 eggs
½ cup flour
¼ teaspoon salt
1 cup shredded coconut

Grease and flour a 10 inch pie pan. Cream butter and sugar. Add eggs and blend well. Add milk, vanilla, flour and salt. Stir in the coconut.


Pour into prepared pan and bake for 30-40 minutes, or until set. “Pie” will make its own crust as it bakes. Serve at room temperature. Can put a dollop of Cool Whip on top when serving, if you prefer.
