Chewy Oatmeal Raisin Cookies



1 cup butter, softened
1 cup firmly packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1-1/2 cup flour
1 teaspoon baking soda
1-1/2 teaspoon cinnamon
1/2 teaspoon salt
3 cups old fashion oats (texture is much better if you don't use quick oats)
1 cup raisins

Heat oven to 350 degrees. Beat together butter and sugars until they are creamy. Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon and salt. Add flour combination to sugar mixture. Do not over mix this can cause cookies to become tough. Drop tablespoon fulls onto ungreased cookie sheet.

Bake 10-12 minutes. Cool 1 minute before removing them from cookie sheet. Place on cooling rack until no longer warm. Enjoy!

Makes 4 dozen

Bar Variation: Bake them in ungreased 9x13 ungreased metal pan. Bake 30-35 minutes.
